In college we would make pasta with spinach, tomato sauce and ricotta all the time. Yummy, cheap, easy and feeds a ton of people.
Take a big pot, boil water in it, add a box of pasta (any kind will work) and cook according to directions. In the last four minutes of boiling, add a box of frozen spinach. After that, microwave a big bowl of pasta sauce. When the pasta/spinach is done, drain it all in a colander/with the lid of the pot, add the tomato sauce, and then add about half a container of part-skim ricotta and then mix it all together - the hot pasta/sauce will melt the ricotta until it turns everything into a creamy tomato sauce. If you're feeling fancy, throw some parmesan cheese on top.
You wind up with something that tastes just like lasagna, is reasonably healthy, and very quick and easy! And for some reason, easy as it is, people are always impressed with this.

There's always "Macaroni, Cheese, Tuna & Peas," which is making a pot of Kraft Mac & Cheese, then tossing in a cup of peas and a can of drained tuna.
MCT&P can be an acquired taste though. It's nutritionally balanced and healthful, especially if you make it with less butter.

First off, don't do the whole ramen noodles thing. Great for SUPER cheap but if you do that for an entire semester/year, it won't be good on your body as a whole...the sodium content will wreck your insides. You can still eat good while being cheap.

Invest in the book "101 Things to do with Ramen Noodles" by Toni Patrick. It gives lots of ways to increase the flavor and nutrition value of that ubiquitous college staple. http://www.amazon.com/101-Things-Do-Ramen-Noodles/dp/1586857355/ref=pd_sim_b_1

My personal favorite is top ramen with shredded lunch meat. All you need is a bowl, a package of noodles, and some deli meat of your choice. Fill up the bowl with water, drop in the noodles, and microwave it for 2-3 minutes. Then, add the flavoring and rip up the lunch meat and toss it in. enjoy!
