Trying to think of creative use for golden beets. Any summer recipe suggestions?

I love to use beets in a salad with a peppery green like arugula (aka rocket,) some kind of soft, pungent cheese like blue or goat, toasted pine nuts or walnuts and orange or tangerine supremes.

I've linked to an example of a beet salad.

Do you also need cooking techniques? Or do you know how to cook the beets?
