2 cups milk or soymilk
1/4 c. white sugar
1/4 c. unsweetened chocolate powder (not drink mix)
2 tablespoons cornstarch
1 Tablespoon real vanilla extract
1/8 teaspoon salt or Molly McButter
1/4 cup semisweet chocolate chips
1. In 1-quart saucepan, stir together all ingredients except chocolate chips. . Heat over medium-high heat, stirring constantly, until mixture thickens and boils. Boil 1 minute; stirring constantly. Do not overcook.
2. Remove from heat; stir in chocolate chips until melted and pudding is smooth.
3. Spoon into 5 individual serving dishes; refrigerate at least 30 minutes to set. Or serve cold, after chilling 3 - 4 hours.
Top with chocolate chips, if desired.
