Tired of my same old salmon recipe, anyone have some exciting ideas on what to do with it this time?

I love Salmon teriyaki (but I don't cook it myself, I leave that to the experts)

I love love love salmon. Try grilled salmon with a simple rub of olive oil, salt, pepper, garlic, onion powder, and dill. Grill on high for 6-8 minutes total. (Sorry it's not an exact recipe b/c I like to experiment in the kitchen). I also love mayo and tarragon on top of salmon fillets and then baked/broiled. No exact measurement but here's what I do:
Salmon Fillets
Mayonnaise
Seasoning salt
Pepper
Tarragon
1 Line pan with foil
2 Put Salmon in pan and sprinkle with seasoning salt
3 Combine mayo and pepper, spread on top of fish
4 Sprinkle with Tarragon
5 Bake covered in oven at 400 degrees for 20 minutes; uncover and broil for 10 minutes
6 Serve and Enjoy!
And lastly, Orange Roasted Salmon.
2 oranges, sliced into rounds
1/2 onion, thinly sliced
1- 3/4 tsp olive oil
2 salmon fillets
1- 1/4 tsp pepper
1/2 tsp garlic powder
1- 1/4 tsp dried parsley
3 Tbs and 1/2 teaspoon orange juice
1- 3/4 tsp lemon juice
1- 1/4 tsp honey
1 Preheat the oven to 400 degrees F
2 In a small bowl or cup, stir together the pepper, garlic powder, and dried parsley.
3 Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture.
4 Place the dish in the preheated oven, and roast for about 25 minutes, or until the onions are browned and tender.
5 Remove the dish from the oven, and increase the temperature to 450 degrees F.
6 Push the onion and orange slices to the outer edge of the baking dish, and place the salmon fillets in the center.
7 Season with the remaining half of the herb mixture.
8 Whisk together the orange juice, lemon juice and honey in a small bowl.
9 Pour evenly over the salmon.
10 Bake for 12 to 15 minutes in the preheated oven, or until the salmon is opaque in the center.
11 Remove fillets to a serving dish, and discard the roasted orange. Garnish fillets with roasted onions and fresh orange slices.

Margarita Salmon
Yield:
4 servings (serving size: 1 fillet and 1 cup pasta)
Ingredients
* 1 teaspoon grated lime rind
* 3 tablespoons fresh lime or lemon juice
* 1 tablespoon tequila
* 2 teaspoons sugar
* 2 teaspoons vegetable oil
* 1/2 teaspoon salt
* 1/2 teaspoon grated orange rind
* 1 garlic clove, crushed
* 4 (6-ounce) salmon fillets (about 1 inch thick)
* 8 ounces uncooked angel hair pasta
* Cooking spray
* Lime slices (optional)
Preparation:
Combine first 8 ingredients in a large zip-top plastic bag; add fish to bag. Seal and marinate in refrigerator 20 minutes.
While fish is marinating, cook pasta according to package directions, omitting salt and fat. Drain and keep warm. Remove fish from bag, reserving marinade.
Preheat broiler.
Place fish on a broiler pan coated with cooking spray; broil 7 minutes or until fish flakes easily when tested with a fork, basting occasionally with reserved marinade. Serve over pasta. Garnish with lime slices, if desired.

One of my very favorite things is Salmon Lasagne.
To your normal lasgane recipe, remove the meat layer. Either bake your salmon with lemon, or used canned for this: add salmon to ricotta cheese in a 3:2 ratio, along with lemon zest.
For your other layer for this, use a mix of only a slight amount of jarred tomato sauce and jarred roasted whole pimentos. Slice the pimentos lengthwise in half.
Assemble the lasagne: on an oiled 9x9 pan, spread a layer of tomato sauce. Follow with a layer of noodles, then a layer of pimentos, laid out flat so there are very few gaps. Spread a very thin layer of tomato sauce over the pimentos (about 1/3 cup). Add another layer of noodles. Then add a layer of the salmon/ricotta mixture, and top with more tomato sauce (about 1/2 c.)
Repeat layers twice more, ending with noodles. Top with shaved fontina cheese and bake at 400 degrees for 30 minutes.

My favorite EASY variation: Bake the salmon fillets with these on top of each: a pat of butter, a little garlic and onion powder, a pinch of salt and pepper, and a tablespoon of apricot jam. Serve with rice pilaf, couscous, etc.
