All standalone Starbucks shops will be open. Kiosk locations and express style Starbucks stores, for example inside an office building or in a grocery store are less likely to be open.
The rule of thumb is if you have to enter a building that is not a Starbucks in order to get to the Starbucks, don't count on it being open New Year's Day.
Here are two visual examples:
The first is a kiosk location. Notice that it's inside another building, probably an indoor mall. This location won't be open when the surrounding mall is closed.
The second photo shows a standalone Starbucks. A store like this will be open on New Year's Day.
