E how explains it clearly. They said cooking with bone intact is the best way to retain the flavor. To debone it before cooking, you can place it on a cutting board with the skin down and bone side up. Hold it by the rib cage and using the tip of the knife make small cuts on the chicken breast between the ribs and the meet separating meet as you go. Continue the contours of the ribs and finish separating the meet from the bone.
