I found a few recipes that use cottage cheese instead of ricotta.

HowStuffWorks Supreme Lasagna
Ingredients:
8 ounces uncooked lasagna noodles
1/2 pound ground beef
1/2 pound mild Italian sausage, casings removed
1 medium onion, chopped
2 cloves garlic, minced
1 can (14-1/2 ounces) whole peeled tomatoes, undrained and chopped
1 can (6 ounces) tomato paste
2 teaspoons dried basil
1 teaspoon dried marjoram leaves
1 can (4 ounces) sliced mushrooms, drained
2 eggs
2 cups (16 ounces) cream-style cottage cheese
3/4 cup grated Parmesan cheese, divided
2 tablespoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups (8 ounces) shredded Cheddar cheese
3 cups (12 ounces) shredded mozzarella cheese

Quick and Easy Lasagna
Ingredients:
* 12 ounces ground beef
* 2-1/2 cups spaghetti sauce
* 6 lasagna noodles
* 1-1/2 cups cottage cheese
* 1-1/2 cups shredded mozzarella cheese (6 ounces)
* 2 tablespoons grated Parmesan cheese (optional)

This is a good recipe because it uses cottage cheese and uncooked lasagna noodles.  It is so much easier than messing with cooking the noodles and slopping them in the pan

I guess I could have just added the recipe on here in case the link didn't work. Here you go:

EASY LASAGNA

1 lb. ground meat
3 1/2 c. (32 oz.) thick spaghetti sauce
1 1/2 c. water
2 c. (15 oz.) cottage cheese
3 c. shredded Mozzarella cheese
1/4 c. grated Parmesan cheese
2 eggs
1/4 c. chopped parsley
1 tsp. salt
3/4 tsp. pepper
8 oz. lasagna noodles, uncooked

Brown beef in 3 quart saucepan, drain off excess fat. Add sauce and water, simmer about 10 minutes. Combine remaining ingredients, except lasagna for filling. Pour about 1 cup sauce on bottom of 13 x 9 x 2 inch baking pan. Layer 3 pieces of uncooked lasagna over sauce. Cover with 1 1/2 cups sauce. Spread 1/2 of cheese filling over sauce. Repeat layers of lasagne sauce and cheese filling. Top with layer of lasagna and remaining sauce.
Cover with foil and bake at 350 degrees for 55 to 60 minutes. Remove foil and bake 10 minutes longer. Let stand for 10 minutes before cutting for easy handling.
