I need to put up alot of cucumbers, but I have already made a crap load of pickles. Any Ideas?

Why don't you make a relish, which goes well on hot dogs and hamburgers (of course) and beans and in tuna fish salad.

Of course there are fresh cucumber recipes, such as dips, sauces, salads and sandwiches that you find on the following link, with about 50 recipes:

Besides, pickling and eating them fresh, there are no practical alternatives for preservation of cucumbers, says the Illinois Extension Service:

Try frozen cucumber salad. My neighbor made about 40 quarts of this and saved them for the winter. It is also easy. Here is a link to a recipe. My favorite is bread and butter pickles. There is also a site that has different recipes for cucumbers so you can freeze them. Pick the recipe you would like to try.

here is some recipies you should make to help get rid of the cucumbers.

Fennel Cucumber Salsa

INGREDIENTS (Nutrition)
1 English cucumber, diced
1 large fennel bulb, diced
1 avocado - peeled, pitted, and diced
1/2 red onion, chopped
1/2 cup pickled banana peppers, diced
1 bunch cilantro, chopped
2 tablespoons honey
3 tablespoons fresh lemon juice
salt and pepper to taste

DIRECTIONS
Combine the cucumber, fennel, avocado, red onion, banana peppers, cilantro, honey, lemon juice, salt, and pepper in a bowl. Allow mixture to sit 20 minutes before serving.

Cucumber Lemonade

INGREDIENTS (Nutrition)
1 cucumber, thinly sliced
1 (12 ounce) can frozen lemonade concentrate
1 (2 liter) bottle lemon-lime flavored carbonated beverage

Place the cucumber slices into a large pitcher. Pour the lemonade concentrate over the cucumber and let stand for 10 minutes. Pour in the lemon-lime soda and pour into glasses to serve.

CREAMY POPPY SEED DRESSING:
2/3 cup vegetable oil
1/4 cup sugar
1/4 cup white vinegar
1/4 cup sour cream
2 teaspoons poppy seeds
1/2 teaspoon salt

Not for storing, but I just made the baked cucumbers recipe out of "Mastering the Art of French Cooking" by Julia Child et al.

It's a very interesting recipe, and makes a good side dish for pretty much anything. Can be cooked in advance, stored a day or two, then reheated.
