Bean sprout salad;
------------------------
Enjoyed by everybody.-
Ingedients:
--------------
1 cup sprouted beans
1 onion finely chopped
juice of 1 lime (can be substituted with a spoon of white vineger)
1/2 tsp of sugar(optional).
1 tbsp salad oil
salt to taste
Pepper to taste
Finely chopped coriander leaves
A few mint leaves chopped
1/2 a cup of grated carrots(for garnishing)
Method:
----------
Steam the sprouted beans with a little salt (without water).dissolve the sugar ina little water if it is used and then mix it with lime or veniger.
Put it ina bowl. Mix in all the other ingredients and toss well .serve garnished with grated carrots.

Ingredients (serves 6)

500 g Fresh bean sprouts (mung or soy)
1 tablespoon Sesame oil
1 tablespoon Salad oil
1 tablespoon Crushed, toasted sesame seeds
3 tablespoons Light soy sauce
1 clove Garlic, crushed
2 Spring onions, very finely chopped
1 teaspoon Honey or sugar
Dash of chili powder or cayenne pepper

Method:
-Wash bean sprouts.
-Bring a pan of lightly salted water to the boil.
-Drop in the bean sprouts and return to the boil.
-Boil for 1 minute if using mung beans, longer for soy beans.
-The sprouts should be just tender, never cooked.
-Drain at once and cool under cold water.
-Drain well.
-Combine all other ingredients for the dressing and toss with bean sprouts.
-Chill before serving.

My favorite Sprout and Pear Salad with Sesame Dressing

Serves 6

8 ounces snow pea sprouts
8 ounces fresh bean sprouts
1 ounce fresh chives
3 1/2 ounces snow peas
1 celery stick
2 firm pears (not green ones)
fresh sprigs of coriander

Sesame dressing: 2 Tablespoons soy sauce
1 teaspoon sesame oil
1 Tablespoon soft brown sugar
2 Tablespoons peanut oil
1 Tablespoon rice vinegar

1. Wash and drain snow pea sprouts. Remove brown tips from bean sprouts. Cut chives into 1/1/2" lengths and cut snow peas and celery into thin matchstick strips. Peel and core pears. Cut pears into thin strips. Place pears in bowl and cover with water to prevent discoloration.
2. Combine all ingredients for Sesame dressing in small screw-top jar. Shake well.
3. Drain pears. Combine all salad ingredients and coriander sprigs in large serving bowl. Pour dressing over and toss lightly.
