Honestly, I think you're best with the basics.

* One pound of lean ground beef
* A couple of handfuls of grated cheese
* A chopped tomato
* A chopped onion, if desired
* A can of drained black beans (or refried beans, if that's your preference)
* You can buy a package of small corn tortillas and fry them in olive oil, then take them out and mold them into taco shells
* The important ingredient - a 59 cent packet of taco seasoning from your local grocery store.

Cook the fat off the ground beef and drain it, then put it in the taco shells. Add tomatoes, cheese, and beans, then add a little bit of salsa to taste, and you're good to go.
