You have to try this wonderful Apricot Bread Recipe. I like to serve cream cheese with it.
Apricot Bread
Makes 2 loaves
2 1/2 cups dried apricots chopped
4 cups flour
2 cups sugar
2 eggs
4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
4 tablespoons butter
1 cup orange juice
1/2 cup water
1 cup chopped pecans
Soak apricots in warm water until plump, drain and chop.
Cream sugar, eggs, water and butter. Stir in orange juice.
Combine flour, salt, soda and baking powder, add to cream mixture
and stir to mix well.
Add apricots and pecans, mixing well.
Pour batter into two 8 inch x 4 inch greased and floured loaf pans. Bake
at 350 degrees for 1 hour or until done. Cool 10 minutes and remove from pans.

Apricot Bran Bread
2/3 cup water
1/2 cup snipped dried apricots
3/4 cup 100% Bran cereal
1 1/4 cup all purpose flour
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 eggs
1/4 cup margarine, melted
1 tsp vanilla
3/4 cup chopped walnuts (optional)
1. Preheat oven to 350 degrees. Grease 9x5x3inch baking pan.
2. In medium saucepan, over high heat, bring water, apricots to a boil.
Spoon into large bowl and stir in Bran. Cool 10 minutes.
3. In medium bowl, combine flour, brown sugar, baking soda, baking
powder, and salt; set aside. With mixer on medium speed, beat eggs,
margarine and vanilla into bran mixture. Stir in dry ingredients and fold in
walnuts.
4. Spread dough evenly in prepared pan. Bake 50-55 minutes or until
toothpick inserted in center comes out clean. Cool in pan on wire rack 10
minutes. Remove from pan and allow to cool completely on rack. Makes
1 loaf.
Apricot Jam
1 pound pitted and halved fresh apricots
1/2 cup orange juice
2 tsp. lemon juice
1 cup sugar
Put ingredients in saucepan and cook on medium/low heat until thick. Stir constantly (20-30 minutes). Cool and spoon into jars. Will keep in refrigerator 1 month.

Pinch ground nutmeg
1 tablespoon lemon juice
1 Pastry for double-crust pie (9 inches)
Milk
Additional sugar
DIRECTIONS
In a bowl, toss apricots, sugar, flour and nutmeg. Sprinkle with lemon juice; mix well. Line a 9-in. pie plate with bottom crust; add filling. Roll out remaining pastry to make a lattice crust. Place over filling; seal and flute edges. Brush with milk and sprinkle with sugar. Cover edges of pastry loosely with foil. Bake at 375 degrees F for 45-55 minutes or until golden brown.
