I found a recipe for a traditional hot sauce from Arequipa called Llatan.
What You''ll Need:
-Rocoto
-Onion
-Garlic gloves
-Huacatay (optional)
-Corn oil
-Salt

What to Do:

1. Boil the whole rocoto for a few minutes.
2. Decide if you want your sauce really hot. If you do then leave the seeds, if not, now is the time to remove them.
3. Slice the onion.
4. Saute onion with two or three garlic cloves.
5. Blend the rocoto, onion, garlic, huacatay leaves, oil and salt.
6. Enjoy!
