I found a recipe for a traditional hot sauce from Arequipa called Llatan.
What You''ll Need:
-Rocoto
-Onion
-Garlic gloves
-Huacatay (optional)
-Corn oil
-Salt
What to Do:
1. Boil the whole rocoto for a few minutes.
2. Decide if you want your sauce really hot. If you do then leave the seeds, if not, now is the time to remove them.
3. Slice the onion.
4. Saute onion with two or three garlic cloves.
5. Blend the rocoto, onion, garlic, huacatay leaves, oil and salt.
6. Enjoy!

I also found a recipe for a creamy Rocoto Sauce that blends rocoto peppers, lime, oil and evaporated milk: http://www.yanuq.com/english/recipe.asp?idreceta=79
When working with the peppers make sure to wear gloves and keep your hands away from your face.
Hope this helps!
