1. Use various and exotic seasonings in the beef, such as chili powder mix, and Cavender's Greek seasoning.
Structure of the taco:
2.Beef on the bottom, and beef on the top;
3.don't overload with any particular topping unless your aware of what you're doing;
4. use your Sour cream and refried beans as a sticking agent to pack your taco tighter, etc.
I can usually eat about 4 regular size tacos if I wanted to, without getting TOO gluttonous. I bet I could eat 8 or 9 on an empty stomach; Maybe more.
Ingredients:
1. Seasoned meat of course(ground turkey or chicken strips as alternative to beef)
2. fresh tomatos cut in small pieces OR salsa
3. Guacamole or sliced avocados
4. fresh Lettuce or Spinach
5. Sour Cream
6. cheese, sauce or shredded
7. Green or red peppers
8. Refried beans

My tacos also include ground beef, taco seasoning, diced tomatoes, and shredded lettuce. I don't like dumping TOO much stuff on the taco because that tends to really obliterate the meat's flavor. I'm eating the taco primarily for the beef, so I don't like to drown out that taste with other garbage.
I can eat, like, two tacos in one sitting. That's a lot for me because I eat several tiny meals instead of two or three large ones. So, a few hours later, I'll go back and get another taco or two.

I use ground turkey instead of ground beef, and McCormick taco seasoning. For toppings you need lots of shredded cheese, (a mix of cheddar & mozzarella does nicely), sour cream, shredded lettuce, chopped tomatoes, avocado or guacamole, which are all basics, and then if you want to get fancy you can add minced cilantro, chopped olives, hot sauce, and maybe a squeeze of lime juice. I usually end up eating 2 tacos if they're in basic corn shells, or it ends up being a very large taco salad.

You have to have shredded cheddar cheese on top of the taco, whether you're going with a hard or soft shell. You also have to have a few dollops of sour cream, because it just isn't a taco without that little bit of tangy taste.
