Here's mine, and it's a snap!

Cream of Broccoli Soup
(Makes lots. I buy the Florets at Costco in a 3-lb bag.)

3 lb bag Broccoli Florets
1 Qt in Water
½ C Butter
3 Tb. Minced Onion (dried or fresh)
1 Tsp Celery Seed
½ Tsp. Celery Salt
½ C Flour
6 C Stock
2 C Milk
2 Tsp Cajun Seasoning (or other seasoning salt), 1 Tsp. Salt

Steam Broccoli. Drain, reserve Water. Melt Butter, Sauté Onion on low for I minute. Add celery salt and seed. Add flour, cook 2 min. Add reserved water, stock, florets, milk, Cajun Seasoning and salt. Bring to boil, Simmer for 10 min. Cool. Blend in blender in batches, then mix batches together in large pot.

I serve this with a dollop of sour cream sprinkled with dill in the middle of the bowl. Yummy!!!

This creamy brocoli soup tastes great.Its loved by all my friends.It is good for health.

Creamy Broccoli Soup (original author to be credited)
------------------------------

Ingredients
--------------
2 cups chicken broth
2 1/2 cups fresh broccoli
1/4 cup chopped onion
1 cup milk
2 tablespoons all-purpose flour
1 cup shredded Cheddar cheese (optional)
1/2 teaspoon dried oregano
salt and pepper to taste

Directions
-------------
1.Bring broth to a boil. Add broccoli and onion. Cook for five minutes, or until broccoli is tender.
2.In a separate bowl, slowly add milk to flour, and mix until well blended.
3.Stir flour mixture into broth mixture. Cook, stirring constantly, until soup is thick and bubbly. Add cheese if desired; stir until melted. Add seasonings and serve.

This recipe is courtesy the Neely’s on Foodnetwork, it got good reviews.

Ingredients
4 tablespoons butter, room temperature
1 1/2 pounds fresh broccoli
1 large onion, chopped
1 carrot, chopped
Salt and freshly ground black pepper
3 tablespoons all-purpose flour
4 cups low-sodium chicken broth
1/2 cup cream
Homemade Croutons, recipe follows

Directions
Melt 4 tablespoons butter in heavy medium pot over medium-high heat. Add broccoli, onion, carrot, salt and pepper and saute until onion is translucent, about 6 minutes. Add the flour and cook for 1 minute, until the flour reaches a blonde color. Add stock and bring to boil.

Simmer uncovered until broccoli is tender, about 15 minutes. Pour in cream. With an immersion blender, puree the soup. Add salt and pepper, to taste, and then replace the lid back on the pot. Serve hot with Homemade Croutons.

Homemade Croutons:
Day old French bread
Olive oil
Salt and freshly ground black pepper
1/4 teaspoon red pepper flakes
Preheat oven to 400 degrees F.

Cut bread into cubes and place in a large bowl. Drizzle cubes with olive oil, salt, pepper and red pepper flakes. Mix well.

Spread seasoned bread onto a sheet pan and bake for about 15 minutes.

This recipe is great for everyone - its low salt and great for kids! They love it.

Prep time: 30 to 45 minutes (includes cooking time)

Ingredients:
** you can change the vegetables as you like, if you take out the celery it will be less salty
** add some grated cheese to the mix when you serve
** extra fresh herbs like parsley or tarragon can make it more spicy and fresh :)

* 1 c. onion, diced
* 1 carrot, diced
* 1 celery stalk, diced
* 1 clove garlic, chopped
* 6 c. broccoli, chopped (about 2 crowns)
* 2 c. low sodium chicken broth
* 2 c. skim milk
* ground black pepper to taste

Directions:

1. In a large soup pot, combine onion, carrot, celery, garlic, and chicken broth. Bring to a boil.
2. Add the broccoli, cover the pot, and cook for 5 to 10 minutes or until broccoli is tender.
3. Allow the soup to cool and transfer the soup to a blender. Add skim milk and blend until smooth.
4. Transfer soup back to the pot and reheat the mixture slowly until heated through.

Serves: 6

** Serve with crispy flat bread or soft fluffy fresh bread...oh yum!
