I agree with you! Bellinis are typically made with sparkling white wine or champagne, so, maybe the bars you patronize aren't that fancy-schmancy? From my personal experience, bartenders don't seem to be trained for (or remember?) "classic" drinks -- at least, ones that aren't trendy, as I have problems getting a decent Manhattan!
