Ham Fried rice is a great choice when trying to decide how to use Thanksgiving leftovers.
Start by scrambling a couple of eggs. Remove from the skillet or wok and then stir fry some cubed ham with onions and garlic.
Remove this mixture and add a few tablespoons of oil to the skillet. Heat and then add several cups of rice. It works better if your rice is cold to start with. Season with garlic powder, salt, pepper, season salt or any other seasoning you prefer. Continue to stir the rice over the heat while it fries. When the rice is as crispy as you like it, add 2 or 3 tablespoons of soy sauce and mix in with the rice.
If you like vegetables in yours, add some peas and carrots. Frozen work best. You can also add bamboo, water chestnuts, bean sprouts etc.
