My guess would be this: they call it a 12oz latte because the cup it comes in can hold 12oz. There is probably only 8oz of milk in the cup (your 90 calories) and a single shot of espresso (usually 1oz) has less than one calorie. The sugar-free flavor syrup probably is made of the same stuff that allows diet sodas to have zero calories as well. The rest of the space in the cup is usually not completely taken up by foam but probably comes close. So you then could have a 12oz cup filled with 9oz of liquid, some foam and still only have 90-91 calories.
