Does anyone know what will happen if you leave the butter out of the muffin recipe?

Is there any other kind of oil in the recipe? If so, I wouldn't think you'd need the butter, unless you want the flavor of it. You could use margarine too, I would suppose. If there is no oil in the recipe, the muffins will get very dry and crumbly and tough to eat.
