Does anyone know what the meat is inside wonton soup?

It depends on the area of China. It's usually pork, but it can also be chicken. In certain areas it could even be water buffalo, or in upper-end restaurants in China, just about anything from duck to starfish.

In the U.S., it's almost always pork, because pork is least expensive.

These are just a few examples. Some Chinese restaurants will sell them wholesale to other restaurants as well.

It is boneless lean pork. Here are the ingredients for future reference:

18 - 24 won ton wrappers
Filling:
1/2 pound boneless lean pork, chopped finely
1 tablespoon soy sauce
1 tablespoon oyster sauce
a few drops sesame oil
1 teaspoon sherry
1/2 teaspoon sugar
1 green onion, finely minced
1 teaspoon cornstarch
2 dashes of white pepper
Other:
Water for boiling won tons
4 1/2 - 5 cups chicken stock
green onion, thinly sliced, as desired
a few drops sesame oil (optional)
