The hydrogenation process involves heat, but it also requires high pressure, hydrogen gas, and a metallic catalyst. Heating vegetable oils for cooking purposes does not cause hydrogenation.

Does anyone know for sure if heating vegetable oils (corn, canola, soy, sun/safflower, etc) turns the oil into a partially hydrogenated oil?
