This is really good. In Italy, polenta is almost always the base for something else.
Polenta Parmesan
Yields: 2 Servings
Ingredients
2 1/4 ounces Polenta, uncooked instant
1 (quick cooking yellow corn
1 Meal)
3/4 ounce Cheese, Parmesan, grated
1 teaspoon Margarine
1/8 teaspoon Garlic powder
1/2 cup Tomato sauce
1 1/2 ounces Cheese, mozzarella part-skim
1 (shredded)
Instructions
1. In 1 1/2 qt saucepan, brint 1 1/2 cups water to a full boil. Stir in polenta, parmesan cheese, margarine, and garlic powder. Reduce heat to medium and cook, stirring constantly, for 4 minutes. 2. Spray 8-inch flameproof pie pan with nonstick cooking spray; pour polenta mixture into pie pan. Preheat broiler. 3. Pour tomato sauce over polenta mixture; sprinkle with mozzarella cheese. Broil until cheese is golden, about 2 minutes.
