Does anyone have a GOOD vegetable muffin recipe? I tried one but it wasn't very good, want them to turn out light and full o flavour

Everyone love my zucchini pineapple muffins. To make this recipe, you'll need:
2 cups grated zucchini
1 can (8 oz) crushed pineapple (drained)
1 cup oil
3 teaspoons vanilla extract
2 cups sugar (I usually use less then half of this)
3 cups flour
1 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1/2 teaspoon baking powder
Mix eggs, sugar, oil, vanilla extract and beat well. Mix in remaining ingredients. Pour into greased muffin tin and bake under toothpick comes out clean about 30 to 45 minutes.
