When I was maitre 'd at a French restaurant, people would line up in the winter for me to make them this recipe from my Grandma instead of letting the barrista make them the restaurant's recipe!

3 cups whole milk
1 cup half-and-half
1/4 cup good quality cocoa powder (I like Ghiradelli if you can find the unsweetened kind)
1/2 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon pure vanilla extract
Pinch of salt

Simmer the milk and half & half. Mix together the dry ingredients in a separate bowl. Add a few tablespoons of the hot milk to the powder & stir to create a paste (this will prevent you having the powdery buildup in the bottom of your glass.) Add the paste & the vanilla to the milk & simmer for a couple of minutes without bringing to a boil.

For garnish, whip some heavy cream & sugar & float on top of the cocoa. Sprinkle a small amount of cinnamon & cocoa over the top & drizzle a small criss-cross of a dark chocolate syrup.

The pinch of salt is very important in anything used with cocoa, so don't leave it out! If you want it less sweet, adjust the sugar to taste. Try this & you'll be ready for winter again before the summer's out! For the grown up version, you can add a shot of Godiva chocolate liqueur & creme de menthe.

Grandma. Top that for hot cocoa cred!

I use raw cocoa powder, sugar and milk. I brew it all in a french press. The cocoa, sugar and milk all go into the french press then add the hot water that I boil in a kettle. Stir it up and let it brew for three minutes, press it down, pour and enjoy.

I have a eight cup press and into that I will add three table spoon scoops of cocoa one scoop of sugar and one cup of milk. It makes the best hot chocolate!! This mixture is not a sweet drink, but more a strong drink. If you want you can add more sugar and use whole milk instead of semi-skim to get a sweet, creamy drink. Enjoy!

You don't have to use a french press to mix this up but the secret to great taste is letting it brew or steep for three minutes before drinking.

If you want a real good mocha just add some course ground Columbian coffee grounds to the mix, for the eight cup french press I will add two scoops of coffee grounds, an excellent drink!

I love Williams-Sonoma's Hot Chocolate. Sadly, their hot chocolate is only seasonal. Godiva is a good second for chocolate flavor.

Ovaltine chocolate. Has a good taste, does not use partially hydrogenated fats (trans fats, to be avoided) and has a lot of vitamins and minerals added. Mixed with powdered milk, it's a great "instant hot cocoa" mix.

Also check out the different Mexican chocolate options, like Abuelita's and Ibarra's. These are blocks of chocolate to be melted in milk to make cocoa. Usually has some cinnamon in it too. I like them because the labels indicate very few ingredients, nothing I don't recognize. And they taste good.

Enjoy your cocoa :-)
