Here's a good basic Jamaican Chicken Curry Recipe I tried recently!

My (step)dad is from India and, growing up with him cooking was fantastic. He makes this chicken curry with potatoes, peas and cauliflower. It's probably not top-rate, but, the homemade puts it over the limit!
I can't supply the recipe... he taught it to me once and I wrote it down. It's essentially: throw everything is a big pot, cook forever, serve with yoghurt.
I gotta go make a quick call...

Curried Chicken Cashew Salad
1 grilled chicken breast, chopped into 1/2" chunks--about 2 cups
1/2 c. mayonnaise
1 T. sweet curry powder (or hot, if you're up for it)
2 scallions, sliced into rings
1 stalk celery, diced
1/2 c. toasted cashews
4 oz. snow pea pods (optional)
Slice/chop everything. Mix curry powder into the mayonnaise, and mix it all together, saving cashews for the end.
