This is so good with fresh summer tomatoes! You must give it a try.
Insalata Caprese Salad
1/2 pound fresh mozzarella cheese, sliced 1/4-inch thick
2 large ripe tomatoes, sliced 1/4-inch thick
1 cup fresh basil leaves
Coarse salt and freshly ground pepper
2 tablespoons drained capers (optional)
1/4 cup extra-virgin olive oil
In a circular design around the side of a serving plate, alternate fresh mozzarella slices on a large platter (or on individual plates if you are doing individual portions) with sliced tomatoes, overlapping for effect.
Tear fresh basil leaves and sprinkle liberally over the slices. Add salt and freshly ground pepper to taste. Sprinkle capers over the top.
Just before serving, drizzle on some excellent extra-virgin olive oil. NOTE: Insalata Caprese should never be allowed to sit in oil for any length of time and become soggy, and no vinegar of any kind goes on Insalata Caprese!
Makes 4 servings.
Variation: How about serving this dish as an appetizer? Very easy to do. Just add some bread slices or crackers.

Cooking in the Kitchen : What is a great dish to make using the herb Basil?
Thai Food - Phanaeng
1. coconut milk 2 cups/ 16 fl oz/ 500 ml
2. Thai red curry paste 3 tbsp/ 45 ml
3. Chicken breast fillets, sliced 1 lb/ 450 g
4. Fresh Green beans 8 oz/ 250 g
5. Unsalted peanuts, roasted and finely chopped 3 tbsp/ 45 g
6. Brown or palm sugar 2 tsp/ 10 g
7. Thai fish sauce (nam pla) 1 tbsp
8. Coconut cream 1/2 cup/ 4 fl oz/ 125 ml
9. Fresh basil leaves 2 tbsp
10. Fresh coriander leaves 2 tbsp
11. Sliced fresh red chili pepper
Add Potato cubes, Add two microwaved potatos and cube them.
The cost is about 16 dollars for the spices and herbs and 3-4 dollars for the chicken. Server over rice.
