I think what sets Coffee Bean apart is that it's a kosher coffee shop (except for in San Francisco), and that it seems like they concentrate on choosing high-quality, all-natural stuff perhaps a little more than other similar companies...

Honestly, Wikipedia has as good of an overall profile on the company as anyone, and in terms of spotlighting the products and the story behind how they're created, the company's own website has some good info.
