My husband and I like Louisiana Red Beans and Rice from Allrecipes.com:
  • 1 pound dried red beans, soaked overnight
  • 6-10 cups water (I put as much as will fit in my 5 qt cooker)
  • 1 pound andouille sausage (or just smoked pork sausage), sliced into rounds
  • 1 large sweet onion, chopped
  • 1 green bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped (optional) (Use gloves!)
  • 8 cloves garlic, chopped
  • 1 teaspoon ground black pepper
  • 1 teaspoon Creole (or Cajun) seasoning, or to taste
  • 6 fresh basil leaves, chopped
  • 1 ham hock
  • 4 cups cooked rice (cook after you've made the beans)
DIRECTIONS
  1. Place the beans and water into a slow cooker. Heat a skillet over medium-high heat. Brown the sausage in the skillet; remove from the skillet with a slotted spoon and transfer to the slow cooker. Reserve drippings. Add onion, green pepper, jalapeno pepper and garlic to the drippings; cook and stir until tender, about 5 minutes. Transfer everything from the skillet to the slow cooker.
  2. Season the mixture with pepper and Creole seasoning. Add the fresh basil leaves and ham hock. Cover and cook on low for about 8 hours, or until beans are tender. If the bean mixture seems too watery, take the lid off the slow cooker and set heat to High to cook until they reach a creamy texture.

Here's my chili recipe. I've always had rave reviews on it:

1 T butter
1/2 large white onion diced
1 lb cubed pork
1 can black beans
1 can pinto beans
1 small can green chiles
1 can beef broth
1 can stewed tomatoes
1 can tomato sauce
3 chipotle peppers diced
cumin to taste
cayenne to taste
1 tsp garlic minced
1/2 tsp onion powder
1/4 tsp oregano
5 chives minced

Melt the butter & saute onion until translucent but not caramelized. Add pork & brown.

Add garlic, oregano, chives, pepper & chipotle & saute for a couple of minutes.

Add everything to the crock pot & let it simmer. It tastes much better on the second day of course, so plan ahead!
