Ingredients:
Baby Corns - Small tender ones 6 to 8 pieces
Carrots - 1 medium sized (diced into small pieces)
Beans - 50 gms or 8 to 10 nos chopped finely
Fresh Peas - 1/2 cup
Cauliflower florets - 1/2 cup
Cabbage - 50 gms (cut into small and thin)
Onion - 1 medium sized (finely chopped)
Garlic - 2 Pods cut into two
Salt to taste
Pepper powder to taste
Water - 3 cups
Butter - 2 tbsp
Cheese Cubes - 2 pieces
Coriander leaves and Pudina Leaves - 1/4 cup each (finely chopped)
Method:
Pressure cook all the vegetables together in 1 cup of water. Drain the water and keep it aside. (You can also micro cook the vegetables by sprinkling little water on top of the vegetables for 2.5 mins to 3 mins in micro high). Mash all the vegetables except baby corn using a ladle. Pressure cook baby corn separately. (In Microwave cook the baby corn for 1 min in micro high). Cut the baby corn into thin slices either vertically or horizontally as per choice.
In a hard bottom pan, add butter and when it melts add onions and garlic and let them get cooked (these two should not get fried). When done, add the mashed vegetables and add another cup of water to it and when it comes to boil add the cooked baby corn to it and add one more cup of water. Add salt and let it blend well.
Remove from flame and add pepper powder. Before serving add the drained water and mix it well thoroughly.
Cut the cheese into small cubes and add it to the soup. Garnish it with coriander and Pudina leaves.
** I have to say the Indian/spicy recipes for corn soups are wonderful :) Yumm!
