This is how grandma used to make strawberry preserves:

2 quarts of berries
7 cups sugar
1 box pectin
3 ounces lemon juice
3 teaspoons butter

. Wash, rinse and chop berries into small pieces & mash.

. Put mashed berries into a pot on the stove. Add one box pectin, 3 oz. lemon juice and 3 tsp. of butter.

Bring to a boil, stirring CONSTANTLY & then add the sugar.

Return to a boil, stirring constantly, let boil for one minute.

Take pan off burner and fill jars immediately.

Wipe outside of jars and put on lids and rings.

Set jars upside down on counter for 5 minutes then set them right side up to cool for 24 hours.

Fresh preserves don't have the shelf life of jars loaded with preservatives you get from the store. use within 3 weeks if kept in the fridge. Freeze the other jars & they will last for a year or so.

Also, make sure to get the freshest berries possible. Try going to a farmer's market if you have one near.
