I can remember being a kid and having to help when my mother made huge batches of kimchi. It was a lot of work and I've never made it myself. I'll give you the list of ingredients and if you still want to try it, you can reply here and I'll write out the directions. The recipe is from a book called "Korean Cooking" and sounds similar to what I remember my mother doing.
I buy kimchi from the local Asian Market and it's good. The only thing I do is add a lot of crushed red pepper flakes cause it isn't hot enough for us.
These are the basic ingredients:
Chinese cabbage
salt
scallions
garlic
fresh ginger
sugar
Korean chili powder (can sub cayenne pepper mixed w/paprika
The entire process takes from 3-6 days before it's ready to eat.
