I cook for one person (myself) almost every day and I actually get some pretty cool recipes online. There are live chefs that will give you low fat, healthy recipes! Pretty cool. Link below.

Cheese and Vegetable Omelet
Low Fat Recipe
Ingredients:
One whole egg
Two egg whites
1 cup diced fresh vegetables, red pepper, mushrooms, onions, etc
1 ounce reduced-fat shredded cheese
Two garlic cloves, minced
Vegetable cooking spray
Chopped parsley, optional

Directions:
Place egg and egg whites in mixing bowl. Dice vegetables and set aside.
Spray pan with vegetable spray. Saute garlic for one minute. Mix eggs using a whisk or a fork. Pour eggs into pan over the garlic. Top the eggs with the cup of diced vegetables and shredded cheese. Cook over low heat until eggs are set. Turn half of the omelet over the other half in the pan and continue cooking until the omelet is cooked well throughout and the cheese has melted. Garnish plate with parsley sprigs, if desired.

Recipe makes one serving.

Toaster French Toast
Low Fat Recipe
Ingredients:
2/3 cup skim or 1-percent milk
Egg substitute equal to two eggs (1/4-cup)
Eight slices apple-cinnamon bread or cinnamon-raisin bread
Nonstick cooking spray
Margarine or butter (optional)
Maple-flavored sugar-free syrup (optional)

Directions:
In a shallow dish beat together the milk and eggs. Dip both sides of bread in beaten mixture. Let stand until well moistened. On a griddle or in a large nonstick skillet sprayed lightly with olive oil if necessary, cook bread in over medium-high heat about two minutes per side or until golden. Cool on waxed paper. Place in a tightly covered container and store in the refrigerator. To serve, toast in the toaster. Serve with margarine or butter and syrup, if desired.

Recipe makes four servings.

Nutrition information could vary slightly depending on the type of bread your use as well as which type of milk you prepare the French toast. The information below is based on using 1-percent and a typical store-bought loaf of cinnamon bread.
