This is my favorite way to prepare any fish! Here are a couple of recipes for you. Enjoy!

Pan Fried Trout Recipe

20 min | 10 min prep

Serves 4

* 2 lbs trout (Whole or Fillets)
* 1/2 cup cornmeal
* 3 tablespoons butter
* salt & pepper

1. Rinse the trout under cold running water (or in the beautiful mountain lake/stream you caught them in).
2. Pat dry.
3. Sprinkle with salt and pepper (I take a zip lock baggie in my pack with salt/pepper/garlic powder mixed together).
4. Melt the butter in a large heavy skillet on medium-high heat.
5. Coat the trout in corn meal and shake off the excess.
6. When the butter is melted, place the coated trout, flesh side down, in the skillet.
7. Fry 4-5 minutes, then turn and fry 4-5 minutes or until the flesh is golden brown and flaky. (Trout may be seasoned with garlic or onion powder before frying if desired, I also take a lemon with me to squeeze over the top).

Broiled Steelhead Trout With Rosemary, Lemon and Garlic Recipe

This recipe would also work for many other types of fish, like catfish or salmon.

20 min | 5 min prep

Serves 3 -4

* 1 lb steelhead fillet, with or without skin
* 1 clove garlic, chopped fine
* 1 1/2 tablespoons coarsely chopped fresh rosemary
* 1 lemon, zest of
* 1/2 lemon, juice of
* 1/4 teaspoon salt
* 1/2 teaspoon fresh ground pepper
* 1 tablespoon olive oil, plus
* additional oil, for greasing baking pan

1. Prepare a baking or roasting pan by lining it with foil and brushing it with olive oil.
2. Preheat broiler.
3. Mix together all remaining ingredients except fish into a well-blended paste.
4. Place fish skin-side down (if it has skin) on baking sheet, then spread seasoning over flesh.
5. Broil fish at second rack away from heat for 5 minutes or less, just enough to sear flesh but not burn herbs.
6. Lower fish to 3rd or 4th rack and lower oven heat to 325°F Bake for 10 additional minutes, or until fish is cooked through in the thickest portion.
7. Serve with steamed vegetables, salad, orzo salad, whatever.

My favorite has always been a simple one: salt and pepper the fish, cover the cut fish with sliced lemons. Put the fish in foil with a little extra room and fold the edges over. Bake.

Delish.
