Lamb chops are incredibly flexible for the seasoning they'll take, going well with savories like rosemary, sage and thyme through to rich and exotic spicing like curry to sweets like the (in)famous european habit of smearing them with mint jelly, so they're relatively safe to experiment with.
Personally, I'm a basic North American hick who likes to fry them in butter and serve them hot, seasoned with salt and black pepper, and smeared with mushroom gravy made from butter and their own fat... but that's just me.

* Lamb chops- 1 lb
* Medium onion- 1 (slice into thin half rings)
* Grated ginger- 1/2 inch piece
* Crushed garlic- 2 cloves
* Green chilies- 2 (finely chopped)
* Whole black peppercorns- 1 tsp
* Cumin seeds- 1 tsp
* Turmeric powder- 1 tsp
* Thick coconut milk- 3 tablespoons
* Cashew nuts- 2 tablespoons
* Oil
* Ghee- 1 tablespoon
* Salt to taste
* Chopped cilantro (coriander) leaves- a small bunch
Method:
Grind the peppercorns and cumin seeds into a coarse powder. Set aside
Heat a tablespoon of oil in a pan and fry the cashew nuts until golden. Remove and keep it aside.
Place the lamb chops in a large pan add turmeric powder, salt, coconut milk and cook for 5 minutes. Set aside.
Heat the ghee in a saucepan and fry the onion slices until golden and add the lamb chops mixture. Fry for 10 minutes.
Add the ginger-garlic, green chilies and little water. Cover the pan and cook for 15 minutes. Now add the pepper-cumin powder, roasted cashew nuts and chopped coriander leaves. Mix well and cook for 10 more minutes. Serve hot.

It's a lamb chop, so you can do anything you want with it: grill, stew, roast, fry, bake or whatever, but because it's lamb, the thing to be sure of is that it's well done. Hi, my husband love lamb chops, I do not! The way he loves for me to cook them is pan grilled on stove top. You can also use a non-stick skillet. I season with salt, pepper, rosemary and garlic powder. He like his medium rare. Cook your prefer way. These are simple but perfectly delicious. Yes you can also grill them.
