I substitute half the butter with unsweetened apple sauce which makes it healthier and always make it with 4 large banana to make it moist. You can also add nuts to get some omega's in. I haven't made it with whole wheat flour, but that would make it healthier. You can also add some bran to the recipe to make it healthier. I do that with most of my muffins. I don't really like the taste of bran but you barely notice it if you add it to your muffin recipes. I usually add semi sweet chocolate chips to the banana muffins, but that makes them a little less healthy but very delicious!

Any muffin recipes that are easy to make, tasty, and still good for you without feeling like you are eating gravel? Photos would be great.
Here is a photo of an organic muffin in a cafe that looks promising. What are your favorites?

You can't beat this recipe, it tastes great and couldn't possibly be any easier to make. It was one of my Weight Watcher's recipe. It is so moist. My grandkids loved them and wanted me to make some for their Halloween Party. I made them in the mini muffin pans and they gobbled them all up! Chocolate Pumpkin Muffins
