Any muffin recipes that are easy to make, tasty, and still good for you without feeling like you are eating gravel? Photos would be great.

Here is a photo of an organic muffin in a cafe that looks promising. What are your favorites?

I recently found this recipe for banana muffins.

I substitute half the butter with unsweetened apple sauce which makes it healthier and always make it with 4 large banana to make it moist. You can also add nuts to get some omega's in. I haven't made it with whole wheat flour, but that would make it healthier. You can also add some bran to the recipe to make it healthier. I do that with most of my muffins. I don't really like the taste of bran but you barely notice it if you add it to your muffin recipes. I usually add semi sweet chocolate chips to the banana muffins, but that makes them a little less healthy but very delicious!

I love banana muffins! Here is a recipe that was taken from the Central Market cookbook out of Lancaster, PA and slightly altered.

Ingredients:
3 large ripe bananas, (can also add in addition to banana 1 cup of grated zucchini to sneak in those veggies)
1 heaping tblsp honey
1 free range, hormone free egg, slightly beaten
1/4 c. flax seeds
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. grounded sea salt
1 1/2 cups whole wheat pastry flour (or oat flour if going gluten/wheat free)
1 tsp. pure vanilla
1/3 cup organic applesauce or 1/3 cup organic butter, melted

Steps:
1. Mash ripe bananas with fork. Add zucchini, honey, flax seeds and egg. Mix well.
2. Mix dry ingredients together.
3. Blend together vanilla, applesauce or butter, and dry ingredients.
Fold lightly into banana mixture until well mixed.
4. Pour batter into lightly greased muffin tins.
5. Bake at 375 degrees for 18 - 20 minutes. Cool 10 minutes before removing from tins

You can't beat this recipe, it tastes great and couldn't possibly be any easier to make. It was one of my Weight Watcher's recipe. It is so moist. My grandkids loved them and wanted me to make some for their Halloween Party. I made them in the mini muffin pans and they gobbled them all up!

Chocolate Pumpkin Muffins

The mix will be thick. Do not over bake.

Yields: 24 muffins | 2 points per muffin

Ingredients:

* 1 box Chocolate Cake mix
* 1 (15-oz) can Pumpkin (not pie mix)
* 1/2 cup water

Directions:

Preheat oven to 350 degrees. Mix together all ingredients. Fill each muffin cup about half-way with batter (Use about 1 heaping Tb per muffin). Bake according to box directions or until toothpick comes out clean.

Yields: 24 muffins

Variation: Trying using a box of Spice Cake Mix instead of Chocolate, to make Pumpkin Spice Muffins!

Nutritional Info: (per muffin) 98.5 calories, 1.5 g. fat, 1.2 g. fiber
