Probably because his books are so long. The full version of The Stand came in at well over 1000 pages. A number of his other books are like that as well. The Tommyknockers was a pretty long tome, so I can see why the movies are so long.
Shawshank Redemption was a little different - it was actually based on a short story rather than a full novel. But it was made in a more artistic format, which lengthened the movie. But it was a fantastic movie, so I didn't mind at all.
