No, Up will not be released to IMAX because Pixar does not have a deal with the IMAX screening company. Though, Disney, does.
Apparently Pixar CCO John Lasseter has been grilled on the topic of IMAX before and has more or less said that the company would not produce for an IMAX theater unless it was utterly necessary.
Though not on IMAX, UP will play at Disney 3D theaters
