Depending on how many people go to the party, there certainly can be something to do.

Because my friend enjoyed wine, and because we live near Napa, I rented a passenger van and drove a bunch of friends and family up to Napa for wine tasting. I did all the driving and didn't drink.. that was everyone else's job! We had a blast!
My bachelor party will ALWAYS be remembered as one of the best days in my memory. The theme was "Sea, Earth and air", but that was all I knew... and that all my friends would be there. First, we went to a reservoir, rented row boats and floated about. After that, we had a nice picnic lunch at the reservoir. Then we went to a mini-racer track (and arcade). All of us did a couple laps around the track and then we played some games. Unfortunately, one of my friends had bought tickets to a concert (I had really wanted to go to the concert, but something else was scheduled for that day).
We went to Berkeley to get some of the best Pizza, but, after we stopped there (and before we ate), they had me put on a blindfold and drove/walked me somewhere. It sounded like a circus as we got closer and I heard "You guys need tickets?" THAT's when it dawned on me... We were at the concert!! (Oingo Boingo if you must know). Then it was off to one of the more popular bars where we drank a bit to end the evening.
So... the answer? It was more fun for me (and for my friend) because the best man created a party with some thoughts about who *I* was. Tailor made!

Ideas for a bachelor party please
My Brother-in-law is getting married.
He's a low key accountant type who doesn't like to drink, but will have a couple when it's appropriate.
He's not a poker player nor does he particularly enjoy strippers.
I want to take him out for a "Bachelor Party" but it seems to me that everything he doesn't like is what makes for a good Bachelor Party.
What are some of the best "straight-up" parties or events that you've gone to? I'm trying to maintain a reputation as a good bachelor party organizer, but am finding it particularly difficult.

How about taking your Brother-in-Law to a bowling alley or play a game of Whirly Ball, Mini Golf, Rock Climbing, Arcade Room, or Laser Tag? After have a little party with some pizza or snacks! Others may include a quiet dinner, go take a trip to the beach and hang out under an umbrella and go swimming, watch a good movie combined with one of the above activities. Oh, if he likes to sing karaoke, go out to a karaoke bar and announce it on the stage that you guys are here for a bachelor party. If he likes frisbee, take him to a park and play a game of frisbee and get some pizzas or some snacks. If he likes plays or musicals, take him to New York City and all pitch in to see a Broadway Show, or the orchestra. If he likes odd museums, maybe you can find the closest Ripley's Museum and all walk around there. Depending on how many people go to the party, there certainly can be something to do.

Man, cigars & scotch sound perfect. Sadly, he likes neither damnit. Now an outstanding location at the top of a tall building... that sounds like a good idea. Then at least I can get some high quality scotch and a cigar into me :)
Gambling is also good. Maybe a stop at a local Casino would be worth a run.
Thanks for the ideas. I appreciate it.

I'll talk about the two best bachelor parties in my life: mine and my best friend's. We were both each other's best men...Because my friend enjoyed wine, and because we live near Napa, I rented a passenger van and drove a bunch of friends and family up to Napa for wine tasting. I did all the driving and didn't drink.. that was everyone else's job! We had a blast!

That does sound like a good day. I hear you about taking into consideration who he is and what he'd enjoy. That's a bit of why I'm searching. I've planned 6.5 bachelor parties that have been successful and I want to be sure to get this one right.
Thanks for the answer drmatt!

You could find a local paintball place. That's a fun way to blow off some steam and shoot each other. How about going to a local beach/lake and grill out steaks? If he's into games, a few rounds of Halo or similar is fun.I'm totally with Jason on cigars and scotch!

Yeah, the Cigars and Scotch in a nice place does sound like a good idea. I've shortlisted that one.... in a nice enough place, it could replace precarious entertainment.
Paintball isn't a bad idea either. It lacks the "party room" and the smell of teen angst that plagues lasertag.
Thanks for the answer!

I'll try and find some exclusive bowling alley in Toronto. Maybe some hotel or similar has installed a Vegas playboy 'esc alley somewhere. Good thinking, thanks.
