Aha, well there are a couple reasons to stick with the basics:
1.) We mostly see kids using spells against Voldemort and the Death Eaters. And accordingly, they don't have enough control and knowledge (largely thanks to the Ministry) to master higher level spells.
2.) Good guys don't do evil magic. Anything that would really hurt Voldemort is considered forbidden...mostly. Although remember that when Dumbledore & Voldemort had a showdown in the MInistry (OOTP), Dumbledore used some pretty fancy and amazing magic to combat He Who Must Not Be Named.
3.) The basics work! If you're not using an Unforgivable Curse, then the basics are your best tools. Removing a persons wand removes their power, stupefying them removes their control, and levitating something/someone gives you the advantage.
...plus less chance that a simple spell will backfire and bit you in the butt!

I always wondered why in harry potter they always used simple and the same spells.. I mean what is that going to do to voldemort?
