Although the show is unscripted, are the families ever told what to say or how to react?

It just seems funny that nobody ever shows any sign of jitters or nerves. Are the cameras hidden? Or, do they forget that they're on TV.

Of course they are told some stuff what to do. The cameras are NOT hidden.
