Wikipedia has some great listings on this question that I will link below.
To put it simply :
-Primary = Mining, agriculture and fishing (Gathering materials)
-Secondary = Manufacturing (Producing those materials into products)
-Tertiary = Service (Selling the products to the consumer)
Each of these is equivalent to a sector of the economy. These sectors can identify how the economy is doing and provide leading, current, and lagging indecators of the economies health.

Secondary production is where these minerals are turned into valuable products.
Tertiary production is where those products are sold.
(I am not entirely sure of the complete accuracy, someone can probably explain it a little better.)
