The Kirsten book series by American Girl is great. I used it with the doll on display and we made the girls pioneer bonnets from tissue paper and caps for the boys. There are cookbooks for this series as well as a craft book so you can extend the experience making cornhusk dolls or some other pioneer craft. The Little House series also is good to read out loud. "Pioneer Girl" is about Laura Ingalls.

" Children of the Trail West" by Holly Littlefield is a great non-fiction choice.
"Apples to Oregon" by Nancy Carpentar, "Pioneer Days" by David King has crafts and activities, "Frontier Children" by Linda Peavey.
