Many business are somewhat lazy when it comes to upgrading their technology. Wait a while and see if you can find some later. You will have more luck in new establishments, though. I have seen some in newly built McDonald's.

I live in the UK and have a wave&pay enabled Debit card, but where can I use it?
I have asked my bank (Barclays), emailed the wave&pay website and been to many of the establishments that are supposed to be partners (as listed on the wave&pay website) but none of the ones I've been into have the hardware or know of any that do.
I live in London and am eager to use my card with this technology, if only to see it work in person.
