Use Oscommerce, it is the most popular and hence the most plugins and templates are available. Also the support is there given the time it has been on the market.

I have used all three and found OSC the best. As others have said it has the best forum support, template selections on the web (look at templatemonster.com or Google "OSC templates"), plugins and ease of use. One issue that I have found is that if using in the US you will have to change some of the terminology as it seems to have a lot of British phrases such as province instead of state and inquiry instead of question or comment on the forms for the shopping cart. Over all these are easy to fix and the code is pretty well commented and easy to follow.
