When you cook caramel past the "ball" stage to the "crack" stage, it will harden when it cools. Almost certainly you just cooked the caramel a bit longer than before.

Why does a soft caramel turn rock hard?
I made a batch of caramel coated peanut and they turned out wonderful!! I kept about half of them in a container but the next day they were rock hard. I have made this recipe before with no problems.... any suggestions on why this happened?

As everything on nature (human body, plants, mud, etc) when they lose water they become hard. try to keep them from loosing water. i think in the case of caramel they must not be in a dry place, but in a very little warm place for a very few moments. try alternating between cold and warm!
