I've always been a big fan of Mark Bittman's stuff. He writes a New York Times column called The Minimalist and in 2007 he covered granola. The coconut in this recipe is optional. I've tried it both with and without. Personally, I think the coconut adds a little crunch, but I've never really liked it. It's perfectly fine without the coconut.

By far this is my favorite recipe bar none. It's been rated at 5 stars with over 165 reviews! It's so simple and tasty and filled with nutty sweetness, but without being overly sugary.

Megan's Granola from Allrecipes
* 8 cups rolled oats
* 1 1/2 cups wheat germ
* 1 1/2 cups oat bran
* 1 cup sunflower seeds
* 1 cup finely chopped almonds
* 1 cup finely chopped pecans
* 1 cup finely chopped walnuts
* 1 1/2 teaspoons salt
* 1/2 cup brown sugar
* 1/4 cup maple syrup
* 3/4 cup honey
* 1 cup vegetable oil
* 1 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
* 2 cups raisins or sweetened dried cranberries

DIRECTIONS

1. Preheat the oven to 325 degrees F (165 degrees C). Line two large baking sheets with parchment or aluminum foil.
2. Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans, and walnuts in a large bowl. Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Bring to a boil over medium heat, then pour over the dry ingredients, and stir to coat. Spread the mixture out evenly on the baking sheets.
3. Bake in the preheated oven until crispy and toasted, about 20 minutes. Stir once halfway through. Cool, then stir in the raisins or cranberries before storing in an airtight container.

Easy-peasy:

2 cups rolled oats (not quick-cooking)
2 cups of your favorite trail mix (that doesn't contain chocolate or it will melt all over your slow cooker)--I like Trader Joe's Really Raw Trail Mix for this
1 T pumpkin pie spice
2 T stevia powder (sugar will burn)
2 T. butter (not margarine or "spread"--use the real thing)

First throw it all in your large pan in the butter and "toast" it for a couple of minutes, and then throw it in the slow cooker. Cover and set on low for about 1 1/2 hours. Spread cookie sheets to cool; then store in airtight containers.

You can't beat Baked Apples. I grew up on Apple Betty/ Apple crisp. This is a healthier version that might enjoy:

Ingredients
6 apples (Apples should be peeled if desired, but in all cases, cored.)
1/3 cup granola-type cereal
1/3 cup dates, Pitted
1/4 cup almonds or walnuts, Chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons lemon juice
6 tablespoons honey, divided
3 tablespoons butter, Melted or margarine
3/4 cup apple juice or water
Directions
Preheat oven to 350*. Place the apples in a 9-inch square baking pan.
In a bowl, combine the cereal, dates, almonds, cinnamon, nutmeg, lemon juice and 3 Tbsp of honey.
Spoon equal amounts of the filling into each apple, packing it lightly.
Stir together the melted butter, the remaining 3 Tbsp of honey, and apple juice.
Pour over the apples.
Cover and bake for 30 minutes.
Uncover and continue to bake, basting often with the pan juices until tender when pierced, about 35 more minutes.
Serve warm.

This one's from my favorite Food Network chef, Alton Brown (Good Eats). Just leave out the coconut. It'll still work fine.

1. Preheat oven to 250 degrees F (120 degrees C). Lightly grease a baking sheet.

3. In a separate bowl, combine honey, brown sugar, vegetable oil, water, salt, and vanilla. Stir well; then pour into the oat mixture, and stir. Spread out on a cookie sheet.
4. Bake for 1 hour, stirring every 15 minutes. Remove from oven, and cool before serving.

Here's a simple and yummy recipe that you can customize to suit your tastes... mix up 10 cups of dry ingredients like rolled oats, wheat germ, chopped nuts, flax or hemp seed (good luck finding that!), other grains, etc. and then heat up 1/2 cup of good oil (like walnut or something with little flavor) with 1/2 cup of honey. Mix all ingredients together and spread out on cookie sheets and toast in a slow oven, (about 275 degrees). You will have to stir it up once or twice while baking. You might also have to do it in 2 batches to toast it right, don't make the layers too thick. When it's done, dump it out onto some newspaper to cool. Then store in a tightly sealed container. Try not to eat too much when it's still warm!
tip - if you like raisins, add them after cooking
