I went there last year. It was a fascinating place.
For a tourist going over there, I would suggest visiting the Burj Dubai (if it is completed). It's the tallest building in the world, by far. Amazing views.
Also, going skiing in the world's largest indoor skiing mountain at Ski Dubai was a lot of fun. Not great skiing, and and the hill was fairly short, but still. You're going skiing in the middle of the desert.
We took a tour of one of the Palm Islands, as well as the Burj Al Arab (the most luxurious hotel in the world). Both highly recommended.
Going riding on an ATV in the sand dunes, going dune crashing in a 4x4, and riding a camel were all fun as well.
