I love COCONUT CAKE with syrup. This is a regular at my house and family gatherings because it is easy to make. Satisfies those sweet cravings.
I have this recipe below, if you want to try it.
COCONUT CAKE with sugar syrup
Ingredients:
2 1/2 cup flour
3/4 cup coconut (dried flakes), 1/2 cup for topping
3 teaspoon baking powder
3/4 cup vegetable oil
1 1/4 cup sugar
3 eggs (medium)
1 teaspoon vanilla essence
3/4 cup coconut milk (thin) or normal milk if you don't have coco milk
Add baking powder to flour. Set aside. Prepare baking pan, oiled and floured. Set oven to 350 deg.
Beat eggs with sugar until creamy. Add oil, vanilla, then beat again. Then add milk little by little with the flour/baking powder mixture. Add the dried coconut and mix thoroughly. Pour in baking pan. Bake for 30 minutes in a 350deg. oven. When knife or toothpick inserted comes out clean, cake is done.
syrup:

1 cup water
1/2 teaspoon lemon juice (or vanilla, if desired)
Boil the sugar , water until reduced to half. 2 minutes before closing,add lemon juice. Poke the surface of cake with fork. When cake is still warm, pour syrup on cake and top with coconut flakes.

In the Summer, my favorite cake is angel food with fresh strawberries and real whip cream.
In Autumn, my favorite cake is Pumpkin.
In the Winter, my favorite cake is Red Velvet with Cream Cheese frosting.
"Let them eat cake" - sounds good to me!!!

When a good friend offered me some of her homemade carrot cake I thought that it sounded really gross. I mean, really, who puts vegetables in cakes, right?
However, out of politeness I accepted a piece and now it's my favorite. ;-)

Of course! It's Paula Deen's pumpkin cheesecake recipe.
Ingredients
Crust:
* 1 3/4 cups graham cracker crumbs
* 3 tablespoons light brown sugar
* 1/2 teaspoon ground cinnamon
* 1 stick melted salted butter
Filling:
* 3 (8-ounce) packages cream cheese, at room temperature
* 1 (15-ounce) can pureed pumpkin
* 3 eggs plus 1 egg yolk
* 1/4 cup sour cream
* 1 1/2 cups sugar
* 1/2 teaspoon ground cinnamon
* 1/8 teaspoon fresh ground nutmeg
* 1/8 teaspoon ground cloves
* 2 tablespoon all-purpose flour
* 1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees F.
For crust:
In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.
For filling:
Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.
Pour into crust. Spread out evenly and place in oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.
