Rosettes are special crisp, tender pastries that are traditional in Scandinavia. One of my dad's aunts made the best rosettes in the world. I still remember her bringing me a box my first year away from home at college.
Prep Time: 15 minutes
Cook Time: 2 minutes
Ingredients:
2 eggs
1 tablespoon sugar
1/4 teaspoon salt
1 cup flour
1 cup milk
1/4 teaspoon vanilla
Oil for deep frying
Preparation:
Beat eggs slightly. Add sugar and salt. Add flour and milk alternately, blending until smooth. Stir in vanilla.
Heat 3" of oil in a deep fryer to 365 degrees. (A deep frying thermometer is very helpful, and I highly recommend it.) Place a rosette iron in the hot oil for 30-60 seconds.
Dip the hot iron into the batter, making sure NOT to let the batter run over the top of the iron. If you do, the rosette will be impossible to remove. Immerse the coated iron in the hot fay and fry 25-30 seconds until light brown. Slip off onto a paper towel. Sprinkle with cinnamon sugar or powdered sugar when cool.

For first rosette, wipe excess oil from iron with paper towels and dip into batter, but do not allow to come over top of iron. Put iron back in hot oil. Fry for about 20 sec. or until desired color.
To remove iron from oil, turn it over to drain. Shake rosette off iron and repeat above steps. Drain rosettes on paper towels. Place paper towels between layers. Place in 300° oven. Turn off heat and allow rosettes to cool. Dust with powdered or regular sugar before serving.
Makes approx. 40 rosettes.

Who has the best rosette recipe?
I love the Norwegian Christmas treat rosettes. I'm trying to find an easy and delicious recipe to try at home (powdered sugar is a personal favorite). Thank you!

The Taste of Home recipe has three times the vanilla that many others call for. Some recipes don't call for any vanilla at all...so because vanilla is my personal favorite...I have included the link to the taste of Home recipe for you to try. Yum, I need to find my rosette iron.
