Love potatoes! One of my favorite ways to prepare potatoes is, of course, baked, but with a twist.
1. My favorite way of having a baked potato is to wrap the potato with a slice or two of bacon and then wrap in foil and bake. The bacon fat seeps into the potato and gives it a wonderful bacon-like flavor through and through.
2. Also, many people don't know how to effectively bake a potato and get the crust really really thick and crunchy. To do this, wash and poke holes in the potatoes. Do not preheat the oven. Place the potatoes in a cold oven and then turn on to about 425 to 450 and leave in there for a good 45 minutes to an hour.
3. Shepherd's pie is also great. It's mainly just a casserole topped with mashed potatoes and then baked until the top of the mashed potatoes are browned. To make it, just brown some hamburger meat in a pan and then add some veggies, whatever your heart desires, but I use green beans, carrots, onion, etc. Once the veggies are cooked to your liking you can either addz some cream of mushroom soup for a sauce, or you can make your own sauce by adding some flour to the grease in the bottom of the pan and then add some milk to make a gravy. After that, place that mixture into a pie pan and cover the entire mixture with mashed potatoes. Place in the oven to brown.
4. Twice baked potatoes. Bake some potatoes, split open lengthwise and spoon out the insides into a bowl. Mix the potato insides with any combination of cheese, butter, sour cream, salt, pepper, garlic, green onions, or anything else your imagination comes up with. Mix thoroughly, spoon back into the emtpy potato shells and bake until brown.
5. Best and easiest potato salad recipe EVER! My own recipe, too! Microwave the potatoes for about 8 to 10 minutes on high, just enough to cook them, but not make them squishy. Remove from microwave, dice, and throw into a bowl, leaving the skins on. (The skins are the best part!) Add mayo, relish, hardboiled eggs, diced onion, salt, pepper and mix gently so as not to break down the potato too much. Then, add about one teaspoon of mustard. Not much! Just enough to make the potato salad a very very slight off-white color. Test the flavor and season further to taste.
6. Potato skins are awesome! Bake some potatoes as I outlined above, placing them in a cold oven. Once throughly baked, cut lengthwise and scoop out the middle. Save the insides for other recipes. Then, top the potato skins with butter, cheese, salt, pepper, even bacon! Whatever you feel like and place back in the oven to become melty, ooey gooey, and brown. Then top with a small dollop of sour cream just before serving.
7. Now, what to do with the insides from those potato skins you made? Make potato cakes. Just take the bowl of cooked potato insides and mix in an egg and a little flour and maybe even some cheese and garlic, or what your tastebuds call for, pick up a small handful, throw onto a hot skillet with a little butter to keep them from sticking, flatten with a spatula and make like a pancake. These things was wonderful!
8. Now let's cover what my dad used to call German fried potatoes. Very good! Heat up a skillet with a little oil, couple of tablespoons. Slice some potatoes into coins and then slice a medium sized onion into half-ringlets. Throw everything into that skillet along with some salt, pepper, and a little garlic powder. Cover and forget about it. Don't watch this dish. It's one of those that comes out way better if you forget your are cooking. After awhile, flip the mixture over in the pan, cover and let go another 20 to 30 minutes. You'll know when it's done because the onions will be dark and caramelized, the potatoes will be cripsy brown, and it will smell oh so good! You can also add an egg or two or three at the end and fry it up in the same pan to add some protein to the dish so you can serve it as an entree. Easy, cheap, and so good!

Cut potatoes into 4
Cook in the microwave for about 15 minutes
Place in large bowl
Toss with extra virgin olive oil, salt, pepper, fresh diced garlic and fresh broken thyme
Place on baking sheet and cook for 30 min at 450 in the oven OR grill on BBQ.
If you have the room, consider letting the sprout! You'll have potatoes for the rest of the year!

Last but not least...
French fries. I cut large quantities of french fries when potatoes go on sale.
I cut them, pat them dry, toss them in a foodsaver vacuum bag and store them in the freezer.

THE ORIGINAL POTATO SALAD
with Real Mayonnaise
Serves: 8
Prep Time: 10 Minute(s)
Cook Time: 15 Minute(s)
2 lbs. potatoes (5 to 6 medium), peeled and cut into 3/4-inch chunks
1 cup Hellmann's® Real Mayonnaise
2 Tbsp. vinegar
1-1/2 tsp. salt
1 tsp. sugar
1/4 tsp. ground black pepper
1 cup thinly sliced celery
1/2 cup chopped onion
2 hard-cooked eggs, chopped (optional)
Instructions:
1. Cover potatoes with water in 4-quart saucepot; bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool slightly.
2. Combine Hellmann's® Real Mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add potatoes, celery, onion and eggs and toss gently. Serve chilled or at room temperature.

Uncle Bill's Fried Potatoes and Onions Recipe
A very easy, simple but tasty side dish.
30 min | 10 min prep
SERVES 4
* 4 large russet potatoes or yukon gold potatoes
* 1 large onion, sliced thin
* 4 tablespoons butter
* 1/2 teaspoon granulated garlic powder
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
1. Peel and slice potatoes about 1/8 inch thick or thinner.
2. Slice onion thinly.
3. In a large frying pan on medium-high heat, melt butter.
4. Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatual, turn the potatoes and onions over so they do not break apart.
5. Sprinkle with granulated garlic powder, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
6. Serve hot with your meal.

Twice baked potatoes are delicious. They take a little extra prep time, but they are well worth it.
1.You need to bake the potatoes first, then cut them in half and scoop out the potato leaving the skin in tact.
2. Put the potatoes in a bowl and add some caesar or ranch salad dressing, a couple of tablespoons for 4 large potatoes (you can do this to taste, add more if you'd like) mash well
3. Fill the potato skins with the mashed mixture so they are slighly heaping, sprinkle grated cheese on top and cooked bacon bits
4. Bake for a few more minutes until the cheese on top melts

Just mash potatoes with some garlic, sour cream, cheese, salt and black pepper. Spoon onto corn or white corn tortillas, roll up, and fry in about 1/2 inch of oil. Flip after about 2 minutes, and continue frying until golden brown and crispy.
Blot on a towel when finished frying, to get some of the grease out. Then serve with a side of salsa or sour cream. Yummy!

8-10 medium red potatoes
water to cover potatoes
1 green pepper
1 large onion
2 cloves garlic, minced
1/2 package bacon, cut into 1" pieces
1 cup milk
1/3 package Velveeta, cut into 1" cubes
1 tsp celery seed
salt and pepper to taste
Quarter and cut potatoes into small pieces. You can peel them or scrub and leave skin on. You may leave the skin on for red or new potatoes, and peel if using others.
Place potatoes in large pot and cover with water; add salt. Boil, covered until tender.
While potatoes are boiling, place bacon, onion, garlic, and green pepper in another large pot and sauté until bacon is cooked, green peppers are tender, and onions are clear.
Drain bacon fat, except for about 1 tablespoon. Add celery seed, salt, and ground pepper and sauté for 1 more minute.
Add sautéd ingredients to undrained boiled potatoes. Turn heat to medium.
Add Velveeta and stir soup until cheese melts. Add milk, and stirring constantly, heat until soup is hot.
Be careful not to burn it.
Makes a great pot of potato soup!

1. ALOO TIKKI RECIPE ( Aloo means Potato).....
Potato Tikki can be make in different ways.

Ingredients:
3 large boiled aloo (potatoes)
1 tsp salt or as per taste
1/4th tsp ground black pepper
For Stuffing:
2/3rd cup matar (green peas) cooked or frozen peas defrosted
1/2 tbsp scrapped and minced ginger
1/4th tsp garam masala
1/4th tsp salt or to taste
Red chili powder to taste (optional)
1tsp coarsely ground dry-roasted cumin seeds
Oil for pan-frying.
How to make aloo tiki :
* Take the cooked or defrosted peas (matar) and mash them using a spoon or a fork. Add all the stuffing ingredients except oil and mash briefly. Divide the mixture into 10 equal portions and keep aside.
* Peel the potatoes and mash them very finely into smooth mashed potatoes. Add salt and pepper and knead until properly mixed.
* Divide it into 10 equal portions.
* Now wash and dry your hands and rub them with little oil.
* Take each portion of potato mixture and make a ball. Now
* Taking one at a time, gently flatten each ball into a round patty of about 1/2-inch thick and place a portion of stuffing in the center and fold the edges together very finely so that mixture does not come out.
* Now very gently flatten it into a 2-inch patty. Repeat the procedure for all pieces.
* Heat 1 tsp. oil in a non-stick pan over a low heat. Slip in the patties, not too many at a time, and pan-fry on both sides till crisp golden brown, adding oil if required, on a very low heat.
* Serve aloo tikki hot with chutney and stirred curd.
Note : Boil potatoes until fork-tender. Preferably, potatoes should be boiled well in advance before use. It would be better if they can be refrigerated for a short time.

2. Masala Potatoes Recipe

Ingredients:
15 baby potatoes scraped clean and washed
1 tsp chilli powder
1/2 tsp. each dhania powder and mango powder
3/4 tsp. sugar, sambhar or garam masala
salt to taste
1/4 tsp. turmeric powder
pinch asafoetida
1 tsp ginger and garlic grated
1-1 1/2 tbsp. oil
2 tbsp. curds
1 tsp mustard-cumin seeds
Method
Do not peel potatoes.
Once scubbed clean under running water, clean with kitchen towel.
Make vertical slits (in a X shape) down the potato carefully.
Mix all the dry ingredients. Press mixture into the slits.
Pressure cook for 1 whistle only.
Heat oil in a kadai (pan), add mustard-cumin seeds, wait to splutter.
Add ginger-garlic and potatoes, curds, chopped coriander and any left over masala.
Cover and cook for 5 mins. or before the masala becomes too dry.
Serve hot with naan or bread or chappati
3. Stuffed Potatoes Recipe:-

Ingredients
3 boiled large potatoes
1 carrot grated
1 tender corncob grated
1 onion, finely chopped
1/2 cup cabbage finely shredded
2 tsp. butter
1 tsp. cheese grated
2 tbsp. white sauce recipe (refer recipe in index)
6 slices stuffed olive rings (optional)
salt to taste
Method
Peel potatoes is desired.
Cut into even halves, scoop out a portion in centre carefully.
Brush halves with butter, keep aside.
Heat remaining butter in pan, add vegetables, stirfry till tender.
Add scooped shreds of potatoes, salt, white sauce, and stir.
Stir and cook till thick.
Pile a portion of mixture in and over each scooped hollow of potato halves.
Garnish with a slice of olive and cheese as desired.
Bake in a preheated oven (180 deg C) for 4-5 mins or till cheese melts.
Serve hot with with a slice of wheat bread.

Fresh curds - 1 1/2 cups
Aji-no-moto - 1/2 tsp
Green chillies - 3
Salt - as required

Oil - enough to deep fry
Bengal gram flour - 2 tbsp
Baking powder - 1/4 tsp
Garam masala powder - 1/4 tsp
Method :
1. Cook potatoes in pressure cooker till one whistle sound. (Half cooked)
2. Peel outer skin and dice into big cubes.
3. Sprinkle little salt, baking powder and bengal gram flour to that.
4. Deep fry in hot oil till light brown. Keep aside.
5. Tie curds to a clean muslin cloth and hang it till water drains from that.
6. Remove that curd cheese from the cloth and whip it with a spoon till it becomes soft.
7. Cut onions into 1 " long pieces.
8. Slit green chillies into two lengthwise.
9. Heat 2 tbsp of oil and fry chillies, onions along with aji-no-moto.
10. When it turns golden brown add whipped curds to that.
11. Sprinkle salt, chilli powder and garam masala powder.
12. Fry in medium flame stirring constantly till oil is separated.
13. Add fried potatoes with little water if necessary.
14. Boil for few minutes and serve hot.

Ingredients :
Potatoes - 1 kg
Salt - 2 tbsp
Red chilli powder - 2 tbsp.
Water - as required.
Method :
1. Slice 1 kg potatoes using chips slicer.
2. In a vessel, take some amount of water such that the chips will just be immersed.
3. Add 2 tsp salt over the chips, mix well and spread on a large plate and dry it in hot sun.
Fry in hot oil at 390 degrees F. until a light golden brown. Don't try frying too many at once, better to put one layer on the frying basket. Drain on paper towels or any kind of plain crumpled absorbent paper.
If you haven't any paper, use a worn dish towel. Salt lightly. These can be kept for some time if they are sealed into plastic bags or containers after they have cooled.

Home made Spicy Potato chips
Ingredients:
2 Potatoes
1/2 tbs Red Chilli Powder
Salt according to taste
5 Garlic pods crushed
Method:
Peel the skin of potato and wash them properly.
Cut into thin slices of large sizes .
Wash the slices again and dry them on a kitchen napkin.
Then put this dry potato slices in a bowl and mix red chilli powder , salt and crushed garlic pods well.
When the oil is hot, deep fry the potato slices and serve hot with mint chutney or simply only chips.

1. Cover potatoes with water in a saucepan with 1 tsp. of salt and cook until skins start to break and with a fork slips through easily.
2. Remove from heat, drain water, cover potatoes with cold water, drain again and set aside to cool.
3. Boil the eggs for 10 mins. and shell them. Mince the onions finely.
4. Peel the potatoes, cube them and cut them in a bowl.
5. Sprinkle with 1/4 tsp. salt and pepper.
6. Chop three of the hard boiled eggs thinly and garnish the salad with these egg slices before serving.

Even if they've started to sprout roots, they'll work well for homefries-- where a softer potato works just fine. I actually used up a page of sprouted potatoes for home fries yesterday.

an old Prussian (Now Poland, I think) recipe
VERY easy and surprisingly delicious.
150g smoked ham per person
100ml cream per person,
1-2 medium sized potatoes per person.
1-2 table spoons of corn flower
boil the potatoes, or make mash.
fry the ham in a bit of butter, almost like bacon.
Put all the ham in the pan, douse with the cream and simmer for 10 minutes.
Thicken the sauce with the corn flower.
voila!
PS: no spices required, the smokey flavour and salt from te ham will go into the sauce. So, EASY on the salt here.

Ingredients for 2 persons (big eaters but can be made for one or for
as many as you like)
2 Potatoes
1 small Onions
2 cloves Garlic
Salt,pepper, herbs of your choice
4 or 5 Eggs
bit of milk to add to eggs for omelet
Peel and cut potatoes, either in slices, cubes or french fries, and
fry them in oil in a skillet. Take them out and put aside.
When potatoes are done, thinly slice an onion and some garlic cloves
and fry them lightly. Add to potatoes.
Mix eggs as if to make your favorite omelet. Then add the
potatoes/onion mixture to the omelet. pour back into your cast iron
pan OR put in a pie pan (or 2). cook over medium-low heat or in a 325
oven till done.
If you have ham or chorizos (Spanish sausages) dice or slice thinly
and add to the onions if you wish before mixing with the potatoes.

A recipee for 4 people will require:
- 1kg potatoes
- Salt
- Pepper
- 150g melting cheese (eg. Gruyere)
- 1/4 liter of cream
- 1/8 liter of milk
- Nutmeg (German Muskat)
- Butter
- 100g cheese eg. Gouda
- Parsley
Basically you peel your potatoes, cut them in thin slices, somewhat like chips but not quite as thin. Stack them on top of eachother in an oven form and add the cream mixed with the cheese as a sauce all over the form so that the potatoes are almost totally covered. Flavour the "sauce" with salt, pepper and the nutmeg. Sprinkle some more cheese on top before putting it in the oven. Cover it with aluminium foil and put it into the oven at 220C° for ca. 60 minutes. Shortly before it is finished take of the foil and let the top part get crispy brown according to your desire. Add the parsley before serving.
The Gratin can also be done by adding garlic, carrots and other vegetables, however personally I like to keep it simple. The meal fits great to meat such as beef or lamb and can be rounded up perfectly with a nice bottle of red wine.

2 lbs potatoes
3/4 lb cabbage
8 spring onions
1/4 pint whole milk
4 ounces high fat butter (I really prefer Plugra)
1/2 teaspoon salt
1/2 teaspoon white pepper
Boil Potatoes until tender
mince cabbage & boil until tender
chop entire spring onion & boil in milk
drain & mash potatoes, seasoning liberally with the white pepper & salt
beat in the onions & milk until the mixture is fluffy
melt 2T of Plugra & toss cabbage into it & blend the mixture into the potatoes. The dish should be light green :-)
If you want to serve it as is, scoop onto a dish & dent with a spoon, adding a pat of butter & some fresh crumbles of bacon.
Or as a cake, make a small patty & fry each side in some bacon fat. (you didn't ask for healthy, you asked for my fav!)
Other advice from grandma: if you are going to bake potatoes, pierce with a fork, oil them & cover with kosher salt & bake directly on the oven rack. Don't wrap them in foil because that keeps the skin soft.

Then, top the potato skins with butter, cheese, salt, pepper, even bacon! Whatever you feel like and place back in the oven to become melty, ooey gooey, and brown. Then top with a small dollop of sour cream just before serving.
7. Now, what to do with the insides from those potato skins you made? Make potato cakes. Just take the bowl of cooked potato insides and mix in an egg and a little flour and maybe even some cheese and garlic, or what your tastebuds call for, pick up a small handful, throw onto a hot skillet with a little butter to keep them from sticking, flatten with a spatula and make like a pancake. These things was wonderful!
8. Now let's cover what my dad used to call German fried potatoes. Very good! Heat up a skillet with a little oil, couple of tablespoons. Slice some potatoes into coins and then slice a medium sized onion into half-ringlets. Throw everything into that skillet along with some salt, pepper, and a little garlic powder. Cover and forget about it. Don't watch this dish. It's one of those that comes out way better if you forget your are cooking. After awhile, flip the mixture over in the pan, cover and let go another 20 to 30 minutes. You'll know when it's done because the onions will be dark and caramelized, the potatoes will be cripsy brown, and it will smell oh so good! You can also add an egg or two or three at the end and fry it up in the same pan to add some protein to the dish so you can serve it as an entree. Easy, cheap, and so good!

Cut potatoes into 4

Last but not least...
French fries. I cut large quantities of french fries when potatoes go on sale.
I cut them, pat them dry, toss them in a foodsaver vacuum bag and store them in the freezer.

My mom came up with a great way to grow potatoes with no building required. Go get yourself a cheap garbage can and poke some holes in the bottom. Fill the trash can up with to about three-quarters full with dirt and plant some potatoes. As the potatoes grow, put more dirt in the can to encourage root growth higher up on the plant. Keep doing this. When the potatoe plant starts to turn brown and die, turn the can upside down and dump out. No digging, no building, very easy!

2 Tbsp. vinegar

1 cup thinly sliced celery
1/2 cup chopped onion

Uncle Bill's Fried Potatoes and Onions Recipe
A very easy, simple but tasty side dish.

SERVES 4
* 4 large russet potatoes or yukon gold potatoes
* 1 large onion, sliced thin
* 4 tablespoons butter
* 1/2 teaspoon granulated garlic powder
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
1. Peel and slice potatoes about 1/8 inch thick or thinner.
2. Slice onion thinly.
3. In a large frying pan on medium-high heat, melt butter.
4. Add sliced potatoes and onions, cover and fry for 10 minutes. Using a spatual, turn the potatoes and onions over so they do not break apart.
5. Sprinkle with granulated garlic powder, salt and pepper and continue to fry with cover removed for another 5 minutes or until potatoes begin to turn slightly brown; turning occasionally.
6. Serve hot with your meal.

Since Robbrown already posted one of my favourite potato recipes, I'll post another one of my favourites! Twice baked potatoes are delicious. They take a little extra prep time, but they are well worth it.
1.You need to bake the potatoes first, then cut them in half and scoop out the potato leaving the skin in tact.
2. Put the potatoes in a bowl and add some caesar or ranch salad dressing, a couple of tablespoons for 4 large potatoes (you can do this to taste, add more if you'd like) mash well
3. Fill the potato skins with the mashed mixture so they are slighly heaping, sprinkle grated cheese on top and cooked bacon bits
4. Bake for a few more minutes until the cheese on top melts

I like making mashed potato taquitos. They are actually a traditional Mexican dish, but you don't see them a whole lot. I know it sounds like a strange recipe, but they are crispy on the outside, creamy inside, and taste amazing! Just mash potatoes with some garlic, sour cream, cheese, salt and black pepper. Spoon onto corn or white corn tortillas, roll up, and fry in about 1/2 inch of oil. Flip after about 2 minutes, and continue frying until golden brown and crispy.
Blot on a towel when finished frying, to get some of the grease out. Then serve with a side of salsa or sour cream. Yummy!

CHEESY POTATO SOUP 8-10 medium red potatoes
water to cover potatoes
1 green pepper
1 large onion
2 cloves garlic, minced
1/2 package bacon, cut into 1" pieces
1 cup milk
1/3 package Velveeta, cut into 1" cubes
1 tsp celery seed
salt and pepper to taste
Quarter and cut potatoes into small pieces. You can peel them or scrub and leave skin on. You may leave the skin on for red or new potatoes, and peel if using others.
Place potatoes in large pot and cover with water; add salt. Boil, covered until tender.
While potatoes are boiling, place bacon, onion, garlic, and green pepper in another large pot and sauté until bacon is cooked, green peppers are tender, and onions are clear.
Drain bacon fat, except for about 1 tablespoon. Add celery seed, salt, and ground pepper and sauté for 1 more minute.
Add sautéd ingredients to undrained boiled potatoes. Turn heat to medium.
Add Velveeta and stir soup until cheese melts. Add milk, and stirring constantly, heat until soup is hot.
Be careful not to burn it.
Makes a great pot of potato soup!

Ingredients:
3 large boiled aloo (potatoes)
1 tsp salt or as per taste
1/4th tsp ground black pepper
For Stuffing:
2/3rd cup matar (green peas) cooked or frozen peas defrosted
1/2 tbsp scrapped and minced ginger
1/4th tsp garam masala
1/4th tsp salt or to taste
Red chili powder to taste (optional)
1tsp coarsely ground dry-roasted cumin seeds
Oil for pan-frying.
How to make aloo tiki :
* Take the cooked or defrosted peas (matar) and mash them using a spoon or a fork. Add all the stuffing ingredients except oil and mash briefly. Divide the mixture into 10 equal portions and keep aside.
* Peel the potatoes and mash them very finely into smooth mashed potatoes. Add salt and pepper and knead until properly mixed.
* Divide it into 10 equal portions.
* Now wash and dry your hands and rub them with little oil.
* Take each portion of potato mixture and make a ball. Now
* Taking one at a time, gently flatten each ball into a round patty of about 1/2-inch thick and place a portion of stuffing in the center and fold the edges together very finely so that mixture does not come out.
* Now very gently flatten it into a 2-inch patty. Repeat the procedure for all pieces.
* Heat 1 tsp. oil in a non-stick pan over a low heat. Slip in the patties, not too many at a time, and pan-fry on both sides till crisp golden brown, adding oil if required, on a very low heat.
* Serve aloo tikki hot with chutney and stirred curd.
Note : Boil potatoes until fork-tender. Preferably, potatoes should be boiled well in advance before use. It would be better if they can be refrigerated for a short time.

2. Masala Potatoes Recipe

Ingredients:
15 baby potatoes scraped clean and washed
1 tsp chilli powder
1/2 tsp. each dhania powder and mango powder
3/4 tsp. sugar, sambhar or garam masala
salt to taste
1/4 tsp. turmeric powder
pinch asafoetida
1 tsp ginger and garlic grated
1-1 1/2 tbsp. oil
2 tbsp. curds
1 tsp mustard-cumin seeds
Method
Do not peel potatoes.
Once scubbed clean under running water, clean with kitchen towel.
Make vertical slits (in a X shape) down the potato carefully.
Mix all the dry ingredients. Press mixture into the slits.
Pressure cook for 1 whistle only.
Heat oil in a kadai (pan), add mustard-cumin seeds, wait to splutter.
Add ginger-garlic and potatoes, curds, chopped coriander and any left over masala.
Cover and cook for 5 mins. or before the masala becomes too dry.
Serve hot with naan or bread or chappati
3. Stuffed Potatoes Recipe:-

Ingredients
3 boiled large potatoes
1 carrot grated
1 tender corncob grated
1 onion, finely chopped
1/2 cup cabbage finely shredded
2 tsp. butter
1 tsp. cheese grated
2 tbsp. white sauce recipe (refer recipe in index)
6 slices stuffed olive rings (optional)
salt to taste
Method
Peel potatoes is desired.
Cut into even halves, scoop out a portion in centre carefully.
Brush halves with butter, keep aside.
Heat remaining butter in pan, add vegetables, stirfry till tender.
Add scooped shreds of potatoes, salt, white sauce, and stir.
Stir and cook till thick.
Pile a portion of mixture in and over each scooped hollow of potato halves.
Garnish with a slice of olive and cheese as desired.
Bake in a preheated oven (180 deg C) for 4-5 mins or till cheese melts.
Serve hot with with a slice of wheat bread.

Onions - 3
Fresh curds - 1 1/2 cups
Aji-no-moto - 1/2 tsp
Green chillies - 3
Salt - as required
Red chilli powder - 3/4 tsp
Oil - enough to deep fry
Bengal gram flour - 2 tbsp
Baking powder - 1/4 tsp
Garam masala powder - 1/4 tsp
Method :
1. Cook potatoes in pressure cooker till one whistle sound. (Half cooked)
2. Peel outer skin and dice into big cubes.
3. Sprinkle little salt, baking powder and bengal gram flour to that.
4. Deep fry in hot oil till light brown. Keep aside.
5. Tie curds to a clean muslin cloth and hang it till water drains from that.
6. Remove that curd cheese from the cloth and whip it with a spoon till it becomes soft.
7. Cut onions into 1 " long pieces.
8. Slit green chillies into two lengthwise.
9. Heat 2 tbsp of oil and fry chillies, onions along with aji-no-moto.
10. When it turns golden brown add whipped curds to that.
11. Sprinkle salt, chilli powder and garam masala powder.
12. Fry in medium flame stirring constantly till oil is separated.
13. Add fried potatoes with little water if necessary.
14. Boil for few minutes and serve hot.

Boil the potatoes and peel off the skin. Cut into quarters.
Add little water to the red chili powder, turmeric powder & salt and make into a paste.
Put the crushed garlic into the paste.
Coat the potato pieces evenly with the spice paste.
Heat oil in a wide pan and fry the spiced potatoes until golden brown.
Serve hot.

Ingredients :
Potatoes - 1 kg
Salt - 2 tbsp
Red chilli powder - 2 tbsp.
Water - as required.
Method :
1. Slice 1 kg potatoes using chips slicer.
2. In a vessel, take some amount of water such that the chips will just be immersed.
3. Add 2 tsp salt over the chips, mix well and spread on a large plate and dry it in hot sun.
Fry in hot oil at 390 degrees F. until a light golden brown. Don't try frying too many at once, better to put one layer on the frying basket. Drain on paper towels or any kind of plain crumpled absorbent paper.
If you haven't any paper, use a worn dish towel. Salt lightly. These can be kept for some time if they are sealed into plastic bags or containers after they have cooled.

Home made Spicy Potato chips
Ingredients:
2 Potatoes
1/2 tbs Red Chilli Powder
Salt according to taste
5 Garlic pods crushed
Method:
Peel the skin of potato and wash them properly.
Cut into thin slices of large sizes .
Wash the slices again and dry them on a kitchen napkin.
Then put this dry potato slices in a bowl and mix red chilli powder , salt and crushed garlic pods well.
When the oil is hot, deep fry the potato slices and serve hot with mint chutney or simply only chips.

1. Cover potatoes with water in a saucepan with 1 tsp. of salt and cook until skins start to break and with a fork slips through easily.
2. Remove from heat, drain water, cover potatoes with cold water, drain again and set aside to cool.
3. Boil the eggs for 10 mins. and shell them. Mince the onions finely.
4. Peel the potatoes, cube them and cut them in a bowl.
5. Sprinkle with 1/4 tsp. salt and pepper.
6. Chop three of the hard boiled eggs thinly and garnish the salad with these egg slices before serving.

My favorites are both on Mahalo pages I've done -- How to Make Home Fries and How to Make Potato Salad. Even if they've started to sprout roots, they'll work well for homefries-- where a softer potato works just fine. I actually used up a page of sprouted potatoes for home fries yesterday.

Hi, an old Prussian (Now Poland, I think) recipe
VERY easy and surprisingly delicious.
150g smoked ham per person
100ml cream per person,
1-2 medium sized potatoes per person.
1-2 table spoons of corn flower
boil the potatoes, or make mash.
fry the ham in a bit of butter, almost like bacon.
Put all the ham in the pan, douse with the cream and simmer for 10 minutes.
Thicken the sauce with the corn flower.
voila!
PS: no spices required, the smokey flavour and salt from te ham will go into the sauce. So, EASY on the salt here.

Potato omelet (tortilla de patatas)
Ingredients for 2 persons (big eaters but can be made for one or for
as many as you like)
2 Potatoes
1 small Onions
2 cloves Garlic
Salt,pepper, herbs of your choice
4 or 5 Eggs
bit of milk to add to eggs for omelet
Peel and cut potatoes, either in slices, cubes or french fries, and
fry them in oil in a skillet. Take them out and put aside.
When potatoes are done, thinly slice an onion and some garlic cloves
and fry them lightly. Add to potatoes.
Mix eggs as if to make your favorite omelet. Then add the
potatoes/onion mixture to the omelet. pour back into your cast iron
pan OR put in a pie pan (or 2). cook over medium-low heat or in a 325
oven till done.
If you have ham or chorizos (Spanish sausages) dice or slice thinly
and add to the onions if you wish before mixing with the potatoes.

Make a Potatoe "Gratin"! I'm not sure what the English name for it is, I believe it is European cuisine and the name comes from French. However it is actually quite simple to make even if it might sound very "gourmet". A recipee for 4 people will require:
- 1kg potatoes
- Salt
- Pepper
- 150g melting cheese (eg. Gruyere)
- 1/4 liter of cream
- 1/8 liter of milk
- Nutmeg (German Muskat)
- Butter
- 100g cheese eg. Gouda
- Parsley
Basically you peel your potatoes, cut them in thin slices, somewhat like chips but not quite as thin. Stack them on top of eachother in an oven form and add the cream mixed with the cheese as a sauce all over the form so that the potatoes are almost totally covered. Flavour the "sauce" with salt, pepper and the nutmeg. Sprinkle some more cheese on top before putting it in the oven. Cover it with aluminium foil and put it into the oven at 220C° for ca. 60 minutes. Shortly before it is finished take of the foil and let the top part get crispy brown according to your desire. Add the parsley before serving.
The Gratin can also be done by adding garlic, carrots and other vegetables, however personally I like to keep it simple. The meal fits great to meat such as beef or lamb and can be rounded up perfectly with a nice bottle of red wine.

I can't believe on a potato recipe request that no Irish recipes were offered! Here's my grandma's colcannon recipe. There's a couple of ways to do this: as an almost mashed-potato type dish or as a soft centred pancake. 2 lbs potatoes
3/4 lb cabbage
8 spring onions
1/4 pint whole milk
4 ounces high fat butter (I really prefer Plugra)
1/2 teaspoon salt
1/2 teaspoon white pepper
Boil Potatoes until tender
mince cabbage & boil until tender
chop entire spring onion & boil in milk
drain & mash potatoes, seasoning liberally with the white pepper & salt
beat in the onions & milk until the mixture is fluffy
melt 2T of Plugra & toss cabbage into it & blend the mixture into the potatoes. The dish should be light green :-)
If you want to serve it as is, scoop onto a dish & dent with a spoon, adding a pat of butter & some fresh crumbles of bacon.
Or as a cake, make a small patty & fry each side in some bacon fat. (you didn't ask for healthy, you asked for my fav!)
Other advice from grandma: if you are going to bake potatoes, pierce with a fork, oil them & cover with kosher salt & bake directly on the oven rack. Don't wrap them in foil because that keeps the skin soft.
