My absolute favorite holiday cookie is the traditional Norwegian treat the Sandbakkel. It is an easy to make butter cookie baked in an adorable tin. Appropriate at any time during the year, these cookies are sure to please any crowd.

Gingerbread cookies -- any basic gingerbread recipe will do. I just love the spicy, fragrant cookie cut into festive shapes.
Rolled sugar cookies -- I really like this recipe from Bon Appetite, but without the chocolate drizzle: http://www.epicurious.com/recipes/food/views/Dutch-Sugar-Cookies-3050
Candy cane cookies -- from an old Betty Crocker cookbook of my mom's. It is a basic almond extract-flavored sugar cookie dough, half tinted with red food coloring. Then the dough is rolled into ropes and woven together into a striped candy cane shape, baked with crushed peppermint sticks sprinkled on top. Also good with peppermint extract instead of almond extract.
Here's a picture that is really close to what they look like (found on Flickr) without the crushed candy cane bits.

I know they're not specifically Christmas-related, but my family always makes chocolate chip cookies during the holidays, and they're my absolute favorite.

I'm a sucker for a sugar cookie decorated with icing and sprinkles. My mother-in-law makes the best sugar cookies. They are rich and buttery, and just the right mix of crunch and chew.She uses this recipe:
